Tales From the Road: Tillamook Cheese

Years ago, I saw a movie about a woman who wrote for a newspaper. She ran out of ideas, so she began writing about different uses of cheese. After five weeks, the editor called her into his office. When the writer revealed what amounted to burnout or loss of imagination, the editor blurted out: “You’re a good writer – write about anything. But no more cheese, lady!”

That was the best line in the movie.

However, since I hadn’t written about that use of milk, since Carol and I were in the town of Tillamook, Oregon, and since I really like cheese, I decided it was time to write about it. When my editor read it, he approved, so I sent him some.

Tillamook is a Native American tribal name, but that’s another story.

Mankind has been making cheese for over 4,000 years, and I read that there are 1,831 kinds of cheese. Cheese is classified by geographic origin, what animal gave the milk, the animal’s diet, age of cheese, texture, added ingredients, butterfat content, and a lot more, and by combinations of all the above. Most milk used in cheese production is from cows, but cheese is also made of milk from goats, camels, sheep, yaks, buffalo, and even reindeer. I wonder if anyone tried giraffe milk.

Tillamook is my favorite brand of cheese, and Colby Jack (marbled yellow & white) is my favorite kind. Don’t ever confuse Colby Jack with Pepper Jack. That stuff is hot! (My editor liked it.)

The Tillamook Cheese Factory is a dairy cooperative that was founded in 1909. My first visit was in the summer of 1991 with Carol and the younger two kids (Rebecca and Michael), and this is my third visit. Over a million people a year must have the same taste for cheese as I do and visit the Tillamook Cheese Factory, so they built a new visitor center, updated its name to Tillamook Creamery, and added a food court.

There is no admission price. You walk in and learn while you enjoy all the free cheese samples.

So, how is cheese made? If you already know, skip the next four paragraphs.

Milk is poured into a vat and an enzyme, rennet, is added to coagulate it. (But juice from fruit, fig leaves, melons, safflower, vinegar, lemons, and other vegetation can be added instead.) This causes the milk to curdle and separate from the liquid whey. Tillamook’s vats hold 53,500 pounds (over 6,300 gallons) of fresh milk. As the milk is stirred, the curds and whey separate. The whey is drained into another container while the curds begin to stick or knit together. This is called cheddaring.

Ten pounds (1 gallon plus 2.5 cups) of cow milk will produce one pound of cheese, while six pounds of sheep milk will produce a pound of cheese because of its much higher fat content. Goat cheese production is similar to cows.

I hope this isn’t boring you. The whole process fascinates me.

The curds are chopped, cut, and pressed to release more liquid. Then the cheese curds are poured into a square column and pressure is slowly increased. When pressure finally reaches 800 pounds, it is held for two minutes then cut into 40-pound blocks. The blocks are stored and aged from 60 days to five years – depending on their intended use.

After the proper aging, the blocks are cut into smaller blocks – normally, half-pound, pound, and two-pound blocks. Mis-shaped or broken pieces are made into shredded-cheese. The Tillamook Creamery packages about a million pounds of cheese a week, and that takes about 1,160,000 gallons of milk each week.

There are hundreds of uses for the whey. It is commonly used as an ingredient in some drink mixes, protein bars, and other foods. Whey powder is often added to smoothies and other workout foods for its protein.

The Tillamook Creamery center is a 38,500-square-foot building that allows visitors the privilege of learning about each step of the milk-to-cheese process and allows them to actually see production from the second-floor level.

We visited the facility twice this week and really enjoyed learning. We ate lunch there, but the best part was the large Tillamook ice cream cones! Carol got huckleberry and chocolate-peanut butter, while I got chocolate and vanilla. That, with the free cheese samples on the second floor, topped off our meal.

Tornado!

Carol and I were visiting our son, Jeremy, and his family in Oklahoma when my cell phone interrupted us. It was a tornado warning for Siloam Springs. We’ve received tornado warnings in the past and were thankful the storms passed over or around our town. But this time, it was different.

After midnight on October 21, 2019, an EF-2 tornado, accompanied by straight-line winds, hit Siloam Springs and a few other places in northwest Arkansas. An EF-2 can cause major damage.

The next day, our daughter-in-law, Angela, checked the news and found that up to nine tornados hit the Dallas-Fort Worth area. The worst of them was an EF-3. Soon, the topic of windstorms, especially tornados, prompted a discussion among the grandkids.

When one of the granddaughters learned that these circular winds can pick up cars, rip roofs off buildings, topple trucks, and pick up and splinter houses, she asked, “Grandpa, how does a tornado pick up huge things like cars and houses?”

Aha! A teachable moment, and five or six grandkids were close by.

“Gloria, what’s the name of the machine that cleans your carpets?”

“A vacuum.”

“Right. And what does it do?”

“It picks up dirt.”

“Right, again. The roller with brushes on it is sometimes called a beater. The roller turns almost 6,500 times a minute. That’s about 108 turns a second. But the machine also has a fan that sucks in air. So, when the roller and brushes vibrate the carpet and shake the dirt loose, the machine pulls loose dirt in with the air. If the vacuum hits a piece of mud, the mud usually breaks apart and the vacuum sucks up the pieces. Small rocks can’t break apart, so the vacuum just swallows them.”

“That gets loud. But how does a tornado pick up cars or houses?”

“I’m getting there. Does your mama have a blender?”

“Yep.”

“When you turn it on, what happens?”

“It chops up food, spins it, and makes it into a liquid.”

“What does it look like as it’s spinning?”

“It pulls the food down in the center and pushes it up on the sides.”

“Right. A tornado does that but upside down. A tornado is like a huge blender but without the blades. The powerful force of the wind and change of air pressure – vacuum – are what tear things apart. Now, let’s put this all together.

Tornados are like a combination of upside-down blenders and right-side-up vacuums. Vacuum heads are only 8-16 inches wide and can pick up dirt, sand, pennies, little rocks, socks, things like that. But a tornado can be as small as 500 feet wide or as large as several miles wide. They create winds as slow as 80-miles-per-hour, or over 300-miles-per-hour. And they can pick up things that weigh several tons.

 “When a tornado hits a car, the car is like a rock and doesn’t break apart. So, the wind moves the car and the vacuum sucks it up. It’ll get banged up, thrown around, and most of the time it’s destroyed. When a tornado hits a house or building, the wind normally tears it apart like a vacuum cleaner breaks up a piece of mud. The tornado sucks up the pieces of buildings and sends them several yards and sometimes miles away. But once in a while, a gentle part of the tornado – that sounds funny – picks up an entire house without shattering it. The house moves sideways for several feet or is turned around without breaking up.”

“But the plumbing and electrical system has to be repaired.”

“You got it. The power of the wind breaks the house loose from the footing, and the upside-down blender suction picks it up and turns it. However, even though the house might look mostly fine, it might have to be rebuilt anyway because of internal damage.”

That brief, over-simplified explanation satisfied the grandkids’ curiosity.

But tornados of other kinds, such as death in the family, loss of job, poor health, breakup of a marriage, can tear up our lives. We might appear to be fine, but we are broken up on the inside, and simple explanations don’t help. A counselor might help us cope, and friends can help us recover; but only God can help us heal.

Don’t be afraid to ask the Lord for help. John 15:13 says, “Greater love has no one than this, than to lay down one’s life for his friends” (NLT). Jesus gave his life for you. Turn to Him and trust Him in the turbulence of your life.

Counting Calories – Again

Although I knew my belt had slowly been getting tighter, I was surprised on May 18, 2014, to find that I weighed 182 pounds. I am five feet, eight inches tall with my shoes on, and I shouldn’t weigh more than 165.

We had been in California from December of 2013 through February of 2014, and my brother fed us well!

I told Carol, “Precious, I am disgusted!”

“What’s the matter?”  

“I am having trouble with my jaws.”

“What do you mean?”

“My jaws are processing way too much food and my tummy is revealing the consequences.”

Laughing, she asked, “Are you going on a diet?”

“No, and Yes. No: I’m not going on a traditional diet that people make and break twelve times a year. And Yes: I am going to count calories.”

And so I did. The weight calculator said my caloric intake should not exceed 1,948 calories daily, so I decided on 1,900 calories for easier figuring. If I went over one day, I stayed under the next day.

I started limiting calories – not food types, but caloric intake – on May 18, 2014; and five weeks later, June 25, I was down to 160 pounds. My plan worked. Ice cream, pies, and cookies were part of my diet, but only in limited quantities, and only after a hearty – not large, but hearty – meal.

If you want to know: my daily caloric intake for the 5 weeks averaged 1,713.

Oh, I almost forgot: Carol also experienced significant weight reduction because we both disciplined ourselves to a new way of eating.

That was eight years ago. But as you know, we again took a prolonged road-trip around our grand country; and guess what? My belt slowly-but-surely got tighter. When we returned home on May 16, 2019, the scale lied: it said I weighed 191 pounds! Not to be outsmarted, I replaced the battery, and the truth was revealed: my true weight was 182 – again. I remembered that tried-and-true “counting-calorie” regimen, and I decided to do it again. Because I was five years older, the weight calculator limited me to 1916 calories daily. So, I limited myself to 1850.

Limiting calories while sitting on the couch or at the computer helps only a little. So in addition to sitting at my desk doing a lot of writing, I exercised. I didn’t have the time yet to go to the gym to work out, so I worked outside.

Tree-trimming, shredding the limbs, weed-whacking around our half-acre, mowing the lawns, burning pine-needles and branches, ridding the premises of unwanted vegetation such as poison ivy, etc., was work! It wouldn’t have mattered if I went over the caloric intake because I burned it off. Nevertheless, I kept track and kept Jaws under control. Or did I keep my eating under control?

Either way, I got the weight down to a healthy level – again. (My average daily caloric intake after 6 weeks averaged 1625.)

I ate mashed potatoes and gravy, hamburgers and steak, chicken and turkey. I really like fish. And I ate fruit and vegetables. I just didn’t over-eat. Yes – milk-shakes, ice cream, pies, and cookies were still in! But in limited quantities.

I’m not a vegetarian, but I found myself asking for more fruit and vegetables, and I lost interest in some foods that are low on nutrition. (Some – not all.) Therefore, I felt better quickly and regained a lot of energy.

By the way: I didn’t LOSE the weight because I knew where it was hiding: in the refrigerator, the food pantry, and at my favorite restaurants. The key is discipline.

Our next short adventures were to Dallas to see our newest grandbaby, and to Pagosa Springs, Colorado, to be with our daughters and friends, and I made sure I didn’t over-eat.

Well, I might need to retract that statement. I caught plenty of 16-inch to 18-inch rainbow trout up there, and I tend to over-eat on fish. However, wild trout has between 202-270 calories for a 6-ounce fillet (depends on how it’s cooked). Compare that with approximately 394 for 6 ounces of hamburger, and approximately 400 for steak. Fish meat is obviously healthier for us.

It wasn’t difficult to reduce my waistline and weight. I just had to WANT to reduce, and I had to want to stay healthy.

The Joy of Family

In mid-August our daughter, and her husband in Colorado asked Carol and me to join them for a 5-day vacation in Pagosa Springs, Colorado. Our other daughter, and her husband, came up from Texas, and our dear friends Charles and Cathy trekked from New Mexico.

What’s going on? We found out.

They all gave Carol and me a surprise 53rd wedding anniversary party! They even gave me my favorite party-food: chocolate cake with chocolate icing, and vanilla ice cream. That combo became my favorite 60 years earlier at my 13th birthday party in San Diego, California.

We had a great time in Pagosa Springs. Breakfast was on our own; Rebecca, a certified Health Coach for Dr. Sears Wellness Institute, gave us ground-breaking ideas of how to enjoy our retirement years – beginning with proper eating-habits. (We began our new eating plan after the ice cream & cake.) And nightly dinner was in Charles and Cathy’s condo. What a time we had!

I enjoyed Rebecca’s teaching as a Health Coach. Implementing her information helped me to get down to my target weight. Starting at 183 pounds, I got down to 164, and there’s no special diet. I eat the food I want, I have more energy, and my clothes fit better. It’s a matter of eating good food and limiting our calories. My daily caloric limit was 1,750, but I seldom ate more than 1,600, and I never went to bed hungry.

Charles and I did what we always did in Pagosa – we went fishing! I kept two of the three catfish and all six rainbow-trout I caught. I should tell you: I like to eat catfish, but in the future, I’ll leave the catfish catching & cleaning business to the restaurants. Those critters are difficult to clean! The restaurants also cook them better than I did.

The smallest trout we caught was 14 inches, and the largest was 19. The trout are easy to clean, wonderful to eat, and Carol makes trout-fish sandwiches with the leftovers. I like that better than tuna-fish sandwiches.

One daughter and family lives in Colorado, and the other daughter and family lives in Texas. One son and family had moved to California, and another son and family moved to Indiana. But Carol and I don’t plan on moving, so we see our son here in Arkansas every day. We play racquetball, and he beats me 95% of the time, but I enjoy the game. Maybe I should mention: the 5% of the times I win are a gift: he humors me by letting me win.

When it was time to part ways in Pagosa, we asked if Serena, one of our granddaughters, could spend a couple of weeks with us. The request was granted.

Carol and I haven’t had small children staying with us for quite a while, and this was a treat.

Seven-year-old kids are smart. They know what they want, and endeavor to get it. But Serena is polite and learned my house-rules quickly. She learned to clean her plate, make her bed, and pick up the toys before bed-time. And it didn’t take long for her to learn to like my Honey Bunches of Oats cereal and my Braum’s vanilla ice cream. I had to make sure I got my fair share of it.

My name for Serena is Bunny and she calls me the Old Goat. Bunny and I hopped around and had a good time. In fact, we had such a good time that Grandma (Carol) had to settle us down several times.

Bunny likes animals, and surprised Grandma with a palm sized Anura. That word in Ancient Greek means without tail and is a frog. There are over 6,300 recorded species of Anurans which amount to about 88% of amphibians today. But even one frog was enough for Grandma. “Keep it out of the house” was the order.

Bunny didn’t talk much around people whom she didn’t know, but she was a talking machine around the house. Bunny enjoyed putting puzzles together with Grandma.

The day after we returned Bunny to her parents, our house felt almost empty. In fact, after breakfast, I turned to see if Bunny had picked up her plate – but no Bunny. Carol said, “I miss her, too.”

The joy of family is one of the greatest pleasures I know and is one of the greatest gifts of God to us. Spend time with your family while you can and cultivate a loving friendship. You’ll be glad you did.

The Positive Side of Life

Have you noticed that I like to be joyful, happy? I like to laugh and have a good time. I learned that from my dad who used to say, “We’re only going this way once; we might as well make the most of it!”  Of course, Dad meant that within a totally Christian lifestyle.

Should we be serious? Yes, but we don’t have to somber to be serious. Just after the North lost a major battle in the American Civil War, President Abraham Lincoln told a joke in Congress and was challenged by his Secretary of State.

“Mr. President, don’t you think you ought to be serious in a time like this?”

President Lincoln replied, “If I took everything serious, I would lose my mind.” Lincoln understood that a little humor alleviated a lot of mental turmoil.

We sometimes forget that God’s original intention for all mankind was to be joyful, happy while we fulfill His will for our lives – even if we encountered difficulties.

Do you know that the word joy, its derivatives, and related words are in the Bible over 250 times? God approves of joy and happiness as we serve Him. One of the words is rejoicing which is “celebration of thanksgiving; making happy sounds; laughing, having a good time; being cheerful.”

Proverbs 15:13 tells us that a cheerful heart brings a smile to your face; a sad heart makes it hard to get through the day.

Proverbs 18:14 informs us that the will to live can get you through sickness, but life is difficult with a broken spirit.

Proverbs 15:15 tells it from the opposite viewpoint: “Every day is hard for those who suffer, but a happy heart is like a continual feast.” In other words, even if we’re poor and are struggling, a cheerful heart fills the day with song.

Proverbs 17:22 says, “A happy heart is like good medicine, but a broken spirit drains your strength.” And I have found that a cheerful disposition is good for our health, but gloom and doom leave us bone-tired.

If you find that the cares of life are getting you down, remember the prayer of Francis of Assissi. It goes something like this:

          Lord, grant me the strength to change the things I can change;       

          Grant me the courage to accept the things I cannot change;

          And grant me the wisdom to know the difference.

Keep in mind that facing each situation with a cheerful disposition can make the difference between success or failure.

A truly joyful person is one who can enjoy the scenery even on a detour. Some of Carol’s and my more enjoyable traveling moments have been on routes we didn’t plan on, and it happened again just today. When things seem to go wrong, we try to find the good in it.

Normally, joyful people are healthier, they are more creative, they are more alert, and are more fun to be around. Why? Joyful people enjoy life! And joy is contagious. (So is depression, and that’s a problem!)

Joyful people don’t usually get stopped by negative influences, but more freely release or express the creativity that our Lord placed within them. Joyful people are generally more productive because they are prone to stay focused on what God wants them to do in this life.

It says in Nehemiah 8:10, “Then he said unto them, Go your way, eat the fat, and drink the sweet, and send portions unto them for whom nothing is prepared: for this day is holy unto our Lord: neither be ye sorry; for the joy of the Lord is your strength.”

That last phrase could be translated, “…for the joy that the Lord gives you will make you strong.”

Forget Murphy’s Law that says, anything that can go wrong will go wrong. That’s pessimistic and can slow you down. Instead, think about how you can make things right.

Let’s focus on and dwell on the last part of Romans 8:28, “…And we know that God causes everything to work together for the good of those who love God and are called according to his purpose for them.”  

So let the joy of the Lord saturate your bones, your mind, your spirit. If something seems to go wrong, turn to God and ask Him for understanding and guidance; and then you be the human element that turns things around for the better.

Frustration with the Unknown

I would like to talk coherently about the flu, but with so much conflicting information floating across the world, it’s difficult to know what to say. So, I’ll start by saying that this flu is a real disease.

I don’t know where you lived, but I grew up in Southern California. Flus made the rounds every year, and I probably got the flu every other year. Although I always recovered, every year thousands of people died from the flu.

The common logic for us was: “If you’re sick, stay home!” There was no mandate to push on us. If we had a cold, the measles, the flu, or any other contagious ailment, we stayed home. It’s silly, if not stupid, to go out and share diseases.

Am I afraid of the covid flu? No. I might have had two strains of it while on travel. Guess what? I stayed in the trailer until I got well. I might have gotten a third strain, and I stayed home. I understand the covid is a real sickness. But I did what I did as a kid, and in each event, I got well in record time. Also, after every trip, Carol and I self-quarantine.

Early on in the pandemic, N95 face masks were touted as being a major factor in controlling covid-19. But what do we get at the stores? These flimsy little corrugated paper things we hang in front of our face. Some folks tell us the masks mainly protect the wearer. Others say they primarily protect others. Yet others say they don’t protect anyone at all. And ….

Oh, let’s get off the mask thing. Nothing is for sure about masks, anyway.

Early on, we were told that if 75% of our population gets the shot, we can control the covid. Woops … make that a double shot. Oh, my goodness, perhaps a third round might be necessary. Now we’re talking about annual boosters. But in all instances, the injections are touted as the cure for the disease.

Oh-oh, millions of people are getting the shots and wearing masks, but the pandemic is getting out of hand again.

Now we’re being told that an apparently healthy person with no covid symptoms can make a person who is “fully-vaccinated” sick. How does that work? Aren’t the first, second, and possible third shots supposed to protect people?

For many years, it was common knowledge that when a person got sick and recovered, he or she was naturally immunized against the disease. It’s been verified around the world. Verified in the home in which I grew up, and I have nine siblings.

But now we’re told that the immunity generated from a man-made chemical is superior to the natural immunity created by human bodies after fighting off the real sickness. Incredible.

What if we’ve already had and recovered from covid-19? What if our temperature is normal? We’re told it doesn’t matter, get the injection anyway. Again, incredible. Apparently, many of our citizens never studied critical thinking. Logic is no longer part of our culture.

Covid-19 and the variants are real diseases. Multi-thousands of people have died of it. But flus have killed people for thousands of years. So let’s be wise. If we’re sick, stay home and don’t spread the illness. But let’s also tell the whole truth.

In courts, witnesses formerly were asked, “Do you swear (or affirm) to tell the truth, the whole truth, and nothing but the truth, so help you God?” Most people answered with, “I do.”

What’s that got to do with the pandemic?

The death numbers related to covid are questionable. I’ve recently seen several reports making statements like: “The provisional death count is ….”

Provisional count? We’re not sure what the cause of death was?

And “Thirty-five more people have died of covid-related diseases.”

Covid-related? What does that mean? Hmmmm …They might not have died of covid?

The main problem here is that the real disease, however it got here, has become a political football. Misinformation, misstatements, misunderstanding, and outright false statements have made the rounds from many people, and we’re frustrated with the unknown.

Publicly we don’t have many answers, yet some good guidance is being rejected.

What can I say about all this?

If you need or want medical assistance, get it. But don’t force your choice of remedies on those who don’t want them. And don’t argue about it.

But keep this in mind: fully vaccinated people are dying of covid and the variants while millions of unvaccinated people are getting sick and recovering.

So, what’s really going on?

If in Doubt, Throw it Out

“Mamma, what’s that yucky green stuff in the ice box?”

Wait a minute. Do any of you know what an ice box was?

Years ago, those things that held food didn’t plug into the wall and were made out of wood. The door on the upper portion was not for ice cream or to freeze your meat and vegetables. You opened that door to put in a 25-pound block of ice. As the ice melted, you could put other food in with it. The ice absorbed heat, melted, and cooled the food in the lower section. Cool, huh?

By the time I entered this world, my parents had long-since replaced the ice box with a fancy thing called a refrigerator. No more visits from the Ice Man. By the way, Carol and I saw a real wooden ice box in the Tillamook County Museum in Tillamook, Oregon. Memories! Buy some Tillamook cheese while you’re there.

These new-fangled refrigerators plugged into the wall and had a compartment that would keep ice cream hard if we put it in the back, but it would freeze meat, vegetables, and water anywhere in that compartment.

Because of our upbringing, we still called it an ice box. However, I had to start calling them refrigerators because in the 1970s I was an appliance repairman, and no one knew what an ice box was.

But where was I? Oh, yes. It was in the 1950s and my parents were visiting some friends.

The mother came into the kitchen to answer the cry about yucky green stuff. “What’s the matter, Maureen?”

“Mamma, there’s yucky stuff on the cheese. What is it?” The little girl was pointing to a dull greenish-blue fuzz.

“Oh, my goodness! Mold is growing again. Well, let’s just cut the green off, and we can eat the rest.”

Today, we understand that the roots of the mold grow deep into the food, and we usually just throw the moldy food out. However, our ice bo – excuse me – our refrigerators today still grow mold under the right circumstances. And we now understand that mold and bacteria are growing before we can see any of it.

So how do we know whether or not the food is fit to eat? Usually, we smell it.

The fungi and bacteria on meat will normally give off an unpleasant odor before the yucky green stuff, or any slime, is visible.

I don’t want anyone to die, or even get sick, from food poisoning; so, years ago I developed one very important phrase as an appliance repairman, and I still say it today: If in Doubt, Throw it Out!

It’s worth memorizing because our health is much more important than a few dollars’ worth of food.

You can find on the internet the procedures for handling and caring for various kinds of food. And it’s quite simple.

But there is a more insidious poison growing in our culture. I call it spiritual and mental poisoning.

Mental health today is a multi-billion-dollar industry, and is complex, cumbersome, and costly! The primary reason is that people don’t see or smell the problem. This poisonous garbage has been insidiously foisted on our culture. But if it is culturally acceptable, it must be good. Right?

Wrong!

Many people are being accused and jailed for sexual immorality. It is gross, ugly, demeaning to men, women, and children, sexist, humanly degrading, and is one of three primary evils offered to our culture through theaters, television, advertisements, and DVDs.

Another evil is hatred. Blatant, cruel, murderous, evil hatred.

The third is evil music accompanied by gross, inane actions of the singers.

The church isn’t helping the situation because a large section of its members supports the garbage industry by paying for it and watching it; and many Christians are just like the world: they don’t seem to understand that it is poisoning humanity.

If people would simply evaluate what they’re watching and listening to, they would easily see that it is destroying us. But reading and studying the Bible would give them wisdom and alert them to the calamity they are bringing upon themselves.

First Thessalonians 5:22 says, “Stay away from everything that is evil.” Simple! That would cure most of the mental problems.

If people want to do what is right, they could objectively realize that it is not good for them. They would realize that it destroys families, society, and the church. They should get rid of it.

But for those who are not sure: If In Doubt, Throw It Out!

Actually, whoever is feasting on it, is either sick, or deceived by the world.

Judgment starts in the House of God, so you Christians should get the garbage out of your homes and lives. Then we can make a positive impact on the world.
